Our replay server is rock solid as well. Toggling replay_enable mid-map has no ill effects I''ve seen, I've done it more than a few times. Only caveat is you need to wait for a mapchange if the toggle was from 0 to 1 - toggling it off mid-map shuts it off immediately.
