Thanks for all your help, guys. I've likely done something simple/ stupid here, but can either of you think of a reason why adding fields to the user model and changing the controller to allow all actions, and changing the permissions to support those changes would result in the "Signup" page having no fields? The page title is there, the [Signup] or [Cancel] is there ... but nothing in between. I haven't played with the LifeCycle definition, so I don't think that's the issue.
