As Earl says, we build on CentOS. Adding in new packages etc is fairly easy, but you will need a CentOS/RHAS box to run the build on. If you grab the svn repo, there's some docs in there (the one you found) that should explain things.
Any further questions (I suspect there might be as it's not as documented as could be), just post here.
