Yes. In Wasatch SoftRIP, if you create a configuration in which the total ink at black point (100% gray) is exactly %100, only black ink will be used to render pixels along the grayscale (R=G=B) at some sacrifice in (color) gamut in shadow regions.
I inspected a grayscale print in high magnification to ensure only black ink is used, then used a spectro to check for neutrality and found it tends toward a cyanish tint. This tint is most pronounced in papers with OBA. The only way for me to get a very neutral print is to employ a CMKY workflow with all color information converted to the K channel and just enough in M and Y to counter the cool tint. Different media requires different addition of color inks. But this black only approach is a bit too grainy for my taste.
