Yes, HPLIP will overwrite foomatic-rip and HP foomatic PPD files. The foomatic-rip is probably the same version because the tar ball pulls from the "foomatic-3_0-branch" at linuxprinting.org. Of coarse you still need the HP foomatic PPD files in order to get the latest HP printer support.
If you do not want to the foomatic update you have two options. 1. Install into DESTDIR, remove what you don't want, then create a binary package. 2. Install only HPIJS.
