Looks like there is an error in the XML file that has information about each printer model.
You can work around this by following these steps (as root):
1. Make the file /usr/share/hplip/data/xml/models.xml writable
2. Edit the file /usr/share/hplip/data/xml/models.xml and change line 10141 from:
<model name="hp_LaserJet_1160">
to:
<model name="hp_LaserJet_1160_series">
(make sure the "name=" matches exactly the model name as in your device URI).
3. Save the file and then restart HPLIP (/etc/init.d/hplip restart).
You should be able to now add the printer to CUPS.
