If you can run the programs through a telnet shell, then you can get 
the version like so:

htdig -?
...

In the search output, you can output the version with the template 
variable VERSION, which by default is output in the footer at the 
bottom of the page.

Why do you not have control over which version the site uses? Who 
hosts the site?
