According to Tom Freeman:

There are a few attributes that control this. I think the one you want is
excerpt_length, which determines how big an excerpt is displayed. There's
also max_head_length which determines how much of the document text is
strored for purposes of showing excerpts, and max_meta_description_length
which does the same for the meta description content, which will be
used for the excerpt if use_meta_description is set to true. All are
