Whenever I need to use sed with a path, I always use "|" instead of "/":
sed -e "s|^CONFIG_DIR=.*|CONFIG_DIR=/stick/your/path/here|" <
CONFIG >CONFIG.new
mv CONFIG.new CONFIG
