The default is usually /tmp, but this may vary on some systems.
Read the man page for the "sort" program on your system.

There are no hard and fast rules, but if you look at the size of
the db.wordlist after htdig ran, and before htmerge runs, you need
enough additional disk space to hold two more copies of it, one as
the sort temporary files in TMPDIR, and one as the final db.wordlist
in your database_dir, which is created in its entirety before the old
one is removed.  Often these two directories are on the same volume,
as the rundig script sets TMPDIR to the database directory chosen at
compile time.
