If you want to compile it, just use "configure --without-x". You'll get a message like
this:

configure: WARNING: Couldn't find X / Motif -- you will be able to compile
pdftops, pdftotext, pdfinfo, pdffonts, and pdfimages, but not xpdf

Just make it and copy the files you need to your binaries directory.

If you have the binaries, just use them, you don't need any other file (except font
files in case you're going to use them, but I've never needed them). I've been using
pdftotext and pdfinfo without X for the last two years in a Solaris system.
