While true, that's only a label. Actually 3.0beta is very stable as we have wide unit test coverage. You can track open issues for 3.0 here:

which as you can see does not contain any real bug.
Btw, how are your efforts divided between a stable 3.x and designing the 4.x?
We fix issues with 3.x whenever we get to know about them. As the "beta" status implies, it is feature complete and the API has been frozen. When no more bug reports are beeing filed for a long enough time we will eventually release it as final.
We have already encouraged all users of HttpClient 2.0 to move to 3.0 and report any issues. You can help speeding up a 3.0 release by using 3.0 and reporting any problems. Be assured that our support to resolving issues is very responsive. So it should be even safe for production systems to switch to 3.0.
Meanwhile we design 4.x.
