which version of hugin do you use?

i still know a version where cropping was only possible by setting the 
field of view. (what you adjust with the sliders)

in current versions, you align your panorama as you like it (horizon on 
or near the horizon line, in a way that the horizon of the image is not 
curved), leave the sliders as they are (even when you have huge black 
borders, for example on the lower half) and then go to the Stitcher tab 
and fill in values at the Crop-Section - go back to the preview window, 
hit refresh and notice the while lines showing you where the image will 
be cut off.
