Oh yeah,

I also tried:
    system ('sips', ' -s format jpeg -s formatOptions $quality
"$prefix-face000$index.tif" --out "$prefix-face000$index.jpg"');
and
    system ('sips', ' -s format jpeg -s formatOptions $quality
\"$prefix-face000$index.tif\" --out \"$prefix-face000$index.jpg\"');

With the exact same result.
