The best way to do that would be to have the camera report its tilt and roll sensor readings frame-by-frame. The EOS 7D has such sensors but does not report them -- I've written Canon to request a firmware fix, but am not holding my breath. I suppose some pro video cameras may have such an output already. It would also be good if the camera reported lens zoom, since the projection is sensitive to fov. Pending the correct solution, I have given Panini-Video a mouse-controlled roll/pitch/zoom tracking tool that shows a kind of 'artificial horizon', with a dilating box to track zoom, overlayed on the image.
