except the case you are an experienced woodworker with a complete woodworking workshop at your hand and are willing to spend some hundred hours on that science project, it might be sensible to consider something less challanging than building a hurdy-gurdy. Try something more simple like any kind of ordinary stringed instrument like a guitar or fiddle. If you think this would be too challengeing - a hurdy gurdy is a very extraordinary stringed instrument.
