Welcome, Steve. Hopefully, you are installing the latest pre-release of Hyperbole from elpa-devel as described in the installation section of the manual, as this is greatly improved from the 8.0.0 version.
For a mail program, either Gnus or Rmail should work well and both include additional Hyperbole support you can enable from hgnus.el and hrmail.el.
