If citizens of the United States of Mexico are called Mexicans then why shouldn't the citizens of the United States of America be called Americans? Other than the USA there is no one place that is simply referred to as America. There is North America and South America, which are continents. Then there is America, which is the short name for the United States of America, a country in North America.
Though apparently it's United Mexican States, not United States of Mexico, but anyway...
