I assume you are talking about the "colors" tab under "tools >> preferences".
I never tried it with outside addresses before, but I just did and it worked. It will even update existing emails as long as you exit your mail box and re-enter (perhaps that is your problem). You might also want to open one of the emails and use "file>>document properties" and look at the tab that shows the details for all the different fields (2nd tab in my case) and verify what is in the "From" field. BTW, I'm using a notes 6.5.1 client.
