(1) In the smp/e  “cross-zone query”    screen  (panelid GIMQU2PO),
if you leave BOTH the “Entry Type” and “Entry Name” fields blank,
and hit enter, you get a long (757 long) laundry list of Entry Types.
Where can one go, what book/source consult to find out what these
things are?

Check out the SMP/E Reference, chapter 2, for Data elements and Hierarchical file system elements (mind the wrap):

Related to the foregoing, and (2) Again, in the smp/e dialog
“query” context, How does one access the info for some of those
critters you find in Unix System Services? E.g., in the /bin
directory, there’s an executable called “zcat” .
<snip>

In an SMP/E dialog context you can't really do the cross-reference kind of query you need for this. So, here's how I do such things and found the SMP/E entry corresponding to the file /bin/zcat:

In the target zone do a LIST LMOD HFS and search the LIST output for "zcat". I found ALIAS '../zcat' in an LMOD entry named FSUMSUNE. For some others you might find a LINK or SYMLINK subentry value in an HFS entry that matches the UNIX file name.
