Thinking out loud, could you set up XRC (or PPRC) pairing between the older Hitachi and newer IBM storage devices, and migrate that way? In outline, you'd (1) swing in the new IBM DS8884, (2) turn on mirroring outbound from the Hitachi storage unit inbound into the IBM unit, (3) wait until the IBM unit is all caught up, even while everybody stays happy with their z/VM-hosted applications and services, (4) quiesce z/VM, (5) wait until the IBM unit is all caught up again (if XRC), (6) break the pairing and configure the IBM unit as primary, (7) repoint z/VM to the IBM unit, and (8) resuscitate z/VM.
I think that all works, but of course check with the vendors. Variations might be possible that don't require a z/VM service interruption, although the basic approach described above, if viable, would make it a short one.
