Iwould love to see what you did as well.  I am 6'2" and the v berth is a

Bridge the space between the settees with 2 pieces of 3/4 plywood. Tow pieces 
because they are easier to store. I used the brackets that hold the dinette 
table on a C-22 to the side. On the C-22, the table drops dow to form a bunk. 
The brackets are perfect to hold the plywood in place so it can be removed 
easily. You can also cut a rabbet in the teak trim.
