Good point on reselling the boat.  I think I will remove, but keep the stove 
and build a box out of teak with a hinged lid that will fill the space for 
storage, but can be removed. With a good inverter we could run a small 
microwave and coffee pot. And we have a grill.  We also have a heater.  I'm 
also planning on getting a small generator to use on any dock that doesn't have 
shore power.  I just know I won't use the alchohol stove and I'd like to use 
the space differently.  Thanks for the suggestions.

Remember, the day will come when you want to sell your boat.  A new  
buyer may want to cruise it overnight so you may want to keep that in  
mind whenever you make modifications to a boat.  On our Catalina 25,  
which had an alcohol stove which we found to be not user friendly, I  
replaced it with a two burner, light weight, propane stove with a  
piezo lighter.  I made a small shelf where the alcohol stove top  
would have been, and this created a nice space for storage below the  
shelf and a place for the propane stubby.  When cruising, a good  
stove is a necessity.  In a pinch, it can also become a cabin heater  
by placing a ceramic flower pot on the burner, or some other item  
made from stainless steel to increase the heated surface area.  CO  
must be monitored as one would do with any other combustion type  
heater used below.
