Hi Steph, As a self-confessed book-aholic, I'm tempted to buy each of the books on your list.
However, if you could read just one and you had two youngsters to start, which would you buy? Two of my favorites on the oldie-but-goodie list are My Horses My Teachers by Alois Podjasky and Give Your Horse a Chance by Lt. Col. A.L. d'Endrody. The second was first printed in 1959. Nancy
