In humans, I believe that ulcers can be caused by h.pylori, and also can be 
NSAIDs induced.

In horses, the ulcers can be caused by over-production of acid.  Since they 
are continuous grazers, their stomachs are continuously producing acid.  If 
they don't graze, the acid builds up and remains on an empty stomach, 
causing ulcers.  Stress exacerbates the situation.
