Very interesting!  I think it's a good thing when the horses learn that they 
can "use" a behavior to communicate with you.  Generally they chose the 
first behavior they learned, but not always.

I remember once working on head-down at the walk with Cookie.  Only that 
once, but she will walk with her nose on the ground when I'm leading her, if 
she's trying to communicate with me.
