By way of experiment, you might try changing out the square brackets to, say, asterisks. The square brackets *might* be causing the MTA to do things in MIME quoted-printable. To be honest, the call for experiment is because I'm a bit lazy at the moment to re-read the RFC to see if the bracket characters fall within the strictly-allowed set of ASCII for headers and I know that Postfix can sometimes be a bit picky about that.
