Anybody who has free time to invest in these video can become a good GIMPy.... Same I have Inkscape video tutorials.. Also, When teacher ask for material then tell them --- I have a magical software in my laptop which i will install on your server and in one month they can create a book by themself -- then install mediawiki, or anyother collaborative tool like Etherpad etc and teach student how it work.
