Give Evolution a try. It'll even have a plugin to talk
to Exchange servers in a couple of months. Believe it
has all the GUI features you want.

For my sins, I also have to deal with an Exchange
server, but fortunately the IT folks turned on IMAP,
so I got fetchmail to do its thing. I use emacs-RMail
as my client - I love GUI, but hate leaving my editor
to do email.
