I have been running kernel 2.5x and kernel 2.6 test for a almost month, 
and I have not seen much instability. In fact, my NVidia drivers also
work fine with it - and system response seems to somewhat better. Also,
high disk activity (updatedb, etc) no longer brings the system to its
knees :-). 
Of course, configuration and installation and patching of the new kernel
can be a little tricky, and you will need to proceed carefully, and keep
your old kernel as a backup (otherwise, you may end up with a unusable
box.)
It required new module tools, and I had to tweak some of the env.
variables to get rpm working.
If I get some time, I will put up a small doc on this at the site.
