Well, what you are seeing is a 'spanned' desktop (ie: both laptop and projector are part of *one* single spanned desktop). To choose the behavior you described, ie: the display on either one screen or a mirrored display, you can try "System->Preferences->Display".

Note, one annoying little glitch is sometime both monitors are detected but one shows up 'on-top' of the other, so until you 'drag' the one on top you would not see the other.

For spanning desktop drag any of the monitors to the position you prefer (ie: left or right of laptop display). For display a single 'non-spanned' desktop on both screens, select Mirror screens. And for using only a single screen, choose the one you do not want to use and select 'off'.

Let us know if it works. If it does you can select the "Show displays in panel" checkbox to quickly launch the interface.

BTW: using spanned desktops is /much/ more convenient than mirrored or individual screens once you get used to it.
