And since it's the case that the college's interested and going to push them to do their final year project, which will be graded, I think the students would be interested for their own sake? IMO the best way would be to start off by doing simple tasks such as learning CMS', python, creating a blog where they write about their experience, tools such as LaTeX etc. That's what we do to new students in my campus-we've a set of simple tasks which they carry out-it increases their confidence and they learn about various open source projects which they can contribute to in future. And helping out through IRC/Mailing list, sure it's possible-Ubuntu has been conducting Ubuntu User Days and Ubuntu Developer Week all the time over IRC only.
