there are two parts to it managing the school itself with Foss and Learning
for using Foss which i think you are trying to cover

in the first category  we have http://www.projectfedena.org/ , Koha, Moodle
and many more

in the second one i would go with something like http://www.nand2tetris.org/

apart from the tangible cost benefit the intangible benefits we would get
are social skills,communications,  the responsibility of maintaining school
network should be owned by them.
