| tar xzpf -

ssh root@<remote server ip> : connect to remote server as root
cd / : [self explanatory I hope]
tar czpf - --exclude "./proc" . : tar everything from the current
directory excluding ./proc and maintaining file permissions and dump the
output after compression to the standard output
tar xzpf - : decompress and extract maintaining the permissions while
reading from the standard input.
This seems to work for me - hopefully it will help you too. Ofcourse you
will have to change the hardware and network info wherever it differs.
