I have Outlook Express set to do just this...

The heirarchy of rules says:

  if it's from X it goes to the X folder
  if it's from Y it goes to the Y folder
  if it's from A it goes to the Z folder
  if it's from B it goes to the Z folder
  if it's from C it goes to the Z folder
  anything else goes to the Junk folder

Works great.

These rules can be set up to apply to only one mail account,
or to all accounts. Personally, I think anyone _not_ using
mail sorting rules is overlooking a very helpful concept.
