Actually, at least some do. See this story on spam:

"iomart (unsurprisingly) concludes spammers use hidden tracking codes to
target further assaults. For a third trial period, spam email was bounced. 

Predictably, based on iomart's earlier findings, there was a marked drop in
the number of spam emails being received. 

The decrease in spam emails started almost immediately, and after about two
weeks the volume being received had decreased by about 40 per cent."

So bouncing spam DOES  reduce your subsequent spam. But more important is
to use a mail client that lets you view HTML emails WITHOUT pulling in any
external images or the like referenced  in it, as this is what validates
your address to the spammers .
