I was able to use Entourage to both download and delete mail in my Hotmail account. Version 10.1.3 of Entourage works with the updated Hotmail. I just added a rule that copies incoming mail to my Inbox and then deletes it.
There is a plugin for the MacOS X Mail application that adds the ability to fetch mail stored on a httpmail (Hotmail) server.
