Priorities in Mail?

Okay, I know it's got to be in here somewhere, but they've hidden it! 
Is there a way to put a priority on a message you're sending, like you 
can do in Netscape and OE? I searched, no luck. I read--ditto. It seems 
that it HAS to be in here ,but what they're calling it is beyond me.
