I just prepped up a G3 AIO and put a 40 gig drive into it. I
zero'd it and made three partitions, 5, 10, 25 gig. I'm installing OS 9.1
onto the 5 gig partition. Question: if I get them AIO on my LAN and just
drop the icon for the Hard drive (single volume) a machine that is on the
LAN, in this case and iMac dv, will it copy the whole thing over, and will
there be issues re File Sharing and so forth?

So you're trying to copy the iMac's HD over to the AIO?
If you are copying OS9 and applications, that should work fine, and the drive will be bootable. Over the built-in 10bT AIO connection it will take a while, but it will work.
If you are copying OSX, then no. It takes a program like Carbon Copy Cloner.
