So, I went searching and found a little app called iPodRip. It was only 10.00 and allowed me to restore the music on the iPod back to my iTunes library on my iMac.

i'm not sure, did you pay for this app, because i got a free one at version tracker called Ollies iPod Extractor. Infact, there were loads of apps that did that kind of thing.
