I was looking at Activity Monitor (Utilities) and I found AppleSpell,
WindowServer, PBS & ATSServer active. What are these items and what
purposes do they serve?

AppleSpell is the automatic spell checker you can see in use in Mail, Safari and other Apple apps.

WindowServer is exactly what it says it is -- the daemon that provides and updates the windows (what you get when you double-click on a drive or folder).

PBS is a television network that's always about to go broke. :)

(okay, you got me ... I don't know what it is)

ATSServer is, I would guess, providing AppleTalk Services. Do you have Appletalk turned on? (Network pane of the system preferences)
