Use OS X's mail application and you won't have that problem. When you reply to any message, the cursor is automatically positioned at the top.
Oh sure, now we will see the arguments about top posting!
Normally I'm very anti-top-posting, but in his case I'll live with it if we can get the other issues under control.
Speaking of Mail and top-posting, a little bird tells me this "problem" will be resolved in Mail 2.0, which is included in Tiger -- which is due out early next year (start saving up!).
