Dunno. To be honest, priority settings have been so abused by spammers I didn't think anybody else bothered with them any more.
Where is the "Text Only", "Styled Text" switch?
Set the default option in the Composing pane of Mail preferences. To override the default for a new message, choose Make Plain Text or Make Rich Text from the Format menu, or type command-shift-T.

Thank you for your help, Miche. I've been using Eudora since forever, but I'm trying to work with Mail.
Re, the priority on outgoing mails, I use it sometimes as it puts the subject in another color, and when it is answered, it stays with the same priority, and I can pick it up more easily.
From what I've seen, I think I'll stay with Eudora, and will use Mail as a backup.
