In System Preferences, click on Appearance and choose from the dropdown menu labelled "Highlight Color".
Incidentally, I just double-checked this to make sure I wasn't writing rubbish, and the change took effect in TextEdit immediately, but not in AppleWorks until I quit and relaunched it.
