Peter I cannot see why this shouldn't work. It is a pretty straight forward procedure to swap optical drives.
They are both slot drives. The Ruby according to MacTracker is an iMac DV, which came with either a 24x CD or a 4x DVD. I had the 500Mhz Snow version which came with a DVD drive and it worked fine for playing DVDs. All of the iMacs in this range have the same graphics card.
