Are you asked when you simply send email? What program are you using?

The keychain is Apple's mechanism for storing passwords securely. You  
can manage what is and isn't stored by using the program Keychain  
Access in Applications > Utilities.

The password it's asking for is most likely the one you need to use to  
log in to the computer or update software. If you don't know what that  
is, boot off of the system CD that I hope your niece gave you, and  
select Change Passwords from the Installer menu.

You can change the administrative password, which is what it's asking  
for.
