Only caveat on running Tiger on G3s is that it can drag with Dashboard on. So best to turn it off. Otherwise, most people claim it works fine. Some people are even crazy enough to run it on Rev A Bondis. Up the RAM to the full 1Gig for best results.
You can also try running Panther, which, depending on whom you ask, might run a tad bit slower or faster than Tiger on G3s.
