Well, there's actually quite a bit you can do, and it's really not  
that difficult.
First off, if you want to run OS X on it, you'll want to upgrade the  
memory to 128 or above, the limit depends on the model, and if it's a  
Rev.A or Rev.B. The HD is easily upgraded with any IDE HD you could  
get that's over 4Gb. It's also possible to put a DVD drive in it, but  
there's no hardware to support DVD playback in OS9 or OSX so it's not  
worth that much.
You can also upgrade the V-Ram up to 6Mb.
I believe there are probably processor upgrades, but I doubt any  
accelerators are still made for the Bondi iMacs, since they are over  
10yrs old, and not used at all nowadays. Perhaps others would know  
more about this, I didn't try to find any processor upgrades for mine;  
it ran 10.4.11 pretty well even with the 233Mhz G3.
As for taking it apart, it's not too hard. I think it's easier then  
the flavored ones, because of it's modular design. I could go into  
more detail, but it would be easier just to google instructions on how  
to do that. If you know your way around computers, it shouldn't be too  
hard. There's a tray that has all the components, the motherboard,  
processor, HD and CD trays.
It'll run 10.4.11 with Xpost facto, if you'd like. I got mine to dual  
boot OS9 and OSX reliably, and your drive doesn't even have to be  
partitioned, although it does make things easier.
