My first suggestion is that unless you're getting Windows expressly for Video gaming or other video-intensive work like 3D CAD or video editing (and for that why someone would use something other than Final Cut for that is beyond me :-) is to avoid Boot Camp like the plague and go for a VM solution like Parallels, Fusion or VirtualBox, which is an open source VM program.

As for the version of Windows, unless you need Windows XP go with Windows 7; it's way better than Vista.
