Check Screen Spanning Doctor. Your G5's video card is more than capable of handling it, but for some obscure reason it's crippled by software. Screen Spanning Doctor will free it, in the same way it freed my 1.25Ghz eMac --which has a vastly inferior graphics card than your iMac does. And for free, too!
